How to get a very dark stain?

I'm going to make a custom bookcase out of plywood. I've seen some in the stores that are a beautiful dark almost chocolate like color. Search for Avington collection on Target.com website for example. How is this dark type of stain achieved. What type of plywood/stain should I use? Local stores have oak, birch, & golden something or other.
